Homemade Burger

Been wanting a classic burger, so I thought of making my own burger bun! This is my first time doing this, so my ultimate guide for this recipe is Joshua Weissman's extremely helpful video. My thoughts:

  • My dough looked very dry so i added extra 2 tbsp milk. I still did not get that satin smooth texture but proceeded anyway.

  • I did not plan my timing well, make sure you allot enough time to let the dough rise twice. I ended up only doing 1-1.5 hrs rather than letting it rise for 2 hrs each.

  • All in all, the bun was tasty but definitely on the dry and slightly flaky side. Tasted like biscuits. Will definitely do it again and hopefully see improvements!

  • For the patty, we used duck fat reserve that we got from another recipe we made previously.


Recipe

BURGER BUN

serves 6 | prep: 30 mins |cook: 16-18 mins| idle: 2-4 hrs

Ingredients

Tangzhong:

  • 2 tbsp bread flour

  • 2 tbsp water

  • 4 tbsp milk

Dough:

  • 1/2 cup warm milk (95F) (I added 2 tbsp more)

  • 1 tbsp instant yeast

  • 2.5 cups bread flour

  • 1 tsp fine salt

  • 2.5 tbsp granulated sugar

  • 1 egg

  • 1 egg yolk

  • 3 tbsp unsalted butter, softened

Egg wash:

  • 1 egg

  • splash of milk

Directions

  1. For Tangzhong paste, Whisk milk, water, and flour in medium saucepan over medium heat until mushy, about 1 min. Set aside.

  2. Stir Milk and yeast. Set aside for 10 mins.

  3. Whisk flour, sugar, and salt in the mixing bowl. Set mixer on low speed, slowly add milk/yeast and the Tangzhong paste. Add egg and egg yolk. Mix on medium low (KitchenAid speed 3) until thoroughly incorporated. Slowly add butter. Let the mixer knead the dough for 5-8 mins until smooth.

  4. Roll dough to a ball and place in greased bowl, cover with damp towel and place in turned off oven with light on for 1-2 hrs.

  5. Once dough is doubled, punch down & divide into 6 even pieces. To shape: Gently stretch the edges of dough toward the center, turn over and make a tight ball.

  6. Place dough balls on baking tray lined with greased parchment. Place inverted baking sheet over the top and let rise for 1-2 hrs.

  7. Brush the entire top of the buns with egg wash (whisk egg and milk in a small bowl). Bake at 375 for 16-18 minutes until golden brown. Brush with melted butter & let cool in a wire rack.

BURGER PATTY

serves 4 | prep: 10 mins |cook: 5 mins

Ingredients

  • Oil enough to cover pan (we used duck fat)

  • 1 lb ground beef

  • 4 slices american cheese

  • 4 small pieces lettuce

  • 4 slices onion

  • Salt and pepper to taste

Directions

  1. Divide ground beef into 4 and form into a round ball.

  2. Heat oil in pan, once heated add ground beef. Press beef with spatula and flip when cooked. Add salt and pepper to taste.

  3. When patty is almost fully cooked, add cheese on top and let melt. Place cooked burger in bun and add onion and lettuce (if you want - i didn't).
